I love a perfectly ripe tomato, washing it off, cutting it up, sprinkling it with salt, and savoring the juicy freshness of each bite.
While I don't have my own garden, I have access to farmers' markets where I can buy fresh garden tomatoes in the summer. But during the rest of the year, grocery store tomatoes are severely lacking in flavor.
This is where canned tomatoes come in handy! While they are no substitute for that fresh garden-ripened experience, they do pack a lot of nutrition and flavor, and I love adding them to my meals throughout the year. If I have canned tomatoes, beans and corn on hand, I can always have a delicious and nutritious meal in minutes.
From tomato paste to crushed tomatoes to fire-roasted diced tomatoes, canned tomatoes come in a wide variety. You can even get whole canned tomatoes! They're delicious straight from the can in cold or ready-to-eat recipes, and you can cook them in a myriad of ways. You can find canned tomatoes with herbs, unsalted, organic, etc. Basically you can find any type of canned tomatoes to suit your fancy!
In my opinion, this is probably the best part. Canned foods are a great invention to help us get valuable nutrients out of perishable foods all year long! You can stock them when they are on sale and not have to worry about them going bad. And like my pantry fantasy, carrying around canned tomatoes allows you to enjoy a delicious meal whenever you want!
Tomatoes are not the toughest of produce. They bruise and can be easily squashed and rotted. That's why canned tomatoes are a great option: they reduce food waste by rescuing tomatoes before they go bad! They also use tomatoes that can't be sold fresh (i.e., "ugly" tomatoes). Not to mention that the steel cans are recyclable and easy to use for many upcycling projects. Remove the labels, wash and dry the cans, and use them for potted plants!
That's how you know this is coming! A cup of canned crushed tomatoes is an excellent source of vitamins C (important for iron absorption) and E. It is also a good source of iron, magnesium, niacin, potassium, thiamin and vitamins B6 and K. Canned tomatoes also contain lycopene, which is particularly beneficial in reducing the risk of prostate cancer. Vitamins E and K are fat-soluble nutrients, which means you need to consume them with a source of fat in order for your body to absorb them.
